90% Palomino, 10% Pedro Ximenez. Sourced from vines outside of Puerto averaging approx. 11 years in age grown in Albariza soils. Heavy vineyard and table selection, direct press, cold stainless steel tank 6-7 C for a couple days, then 15 C for spontaneous fermentation (separate for each varietal) to retain aromatics, which lasts about 20 days. After fermentation the wine is moved off of the gross lees, then hermetically sealed in stainless steel tank, opened 4 times over 6 months to stir fine lees before blending and bottling. The wine is bottled without being subjected to any type of treatment, other than addition of SO2, in order to preserve all possible natural aromas.1750 cs produced.
