The SB is from Calaveras, the Chenin from Clarksburg, the others from El Dorado. Spontaneous fermentation at cold temperature in stainless steel tank for about 3-4 weeks. Aged in neutral French oak and stainless barrels for 8 months prior to blending and bottling. 300 cases produced.
