GEOGRAPHY: Napa, CA
VINEYARD: Valdiguié (Napa Gamay) from a vineyard just outside of Napa town in the Suisun Valley. Planted in the early 90s, and tucked away in the hills, this relatively cool vineyard produces lighter and fruitier Valdiguié than the other sites we work with.
VINIFICATION: Whole clusters were allowed to go through carbonic maceration for about 14 days then whole cluster pressed using our gentle pressing cycle. The wine was then fermented in small barrels for approximately 30 days to assist in settling. Finally, the wine was racked to stainless and bottled with a small amount of sulfur.
AGING: Aged 45 days in a combination of neutral oak and stainless steel.
