TERROIR: The soil is marly limestone from the middle Oxfordian period. This kind of soil corresponds to that of Corton Charlemagne, which abuts this parcel. If this parcel is listed only as a 1er Cru, it’s due to the fact that it was fallow land at the time of classification of the appellations.
GRAPE VARIETIES: 100% Chardonnay
VINIFICATION : The grapes are crushed whole and the must left to settle cold for 24 hours. The clear must is fermented in oak barrels, 25% of which are new oak. The wine then matures on lees for 10 to 12 months. The wine is bottled with no fining and after plate and frame filtering.
FOOD PAIRING: With duck, goose and game birds.
