VITICULTURE: Hand harvested. Practicing organic (in official conversion). Age of vines 30-60 years. At the first waning crescent moon in September, the Garganega shoots leading to the grape clusters are cut and the clusters are left in the vineyard to raisinate for one month before harvest - normally in mid-October.
VINIFICATION: Fermented in a large, neutral 20 HL Allier cask.
AGING: Aged for 18 months in the large, neutral 20 HL Allier cask.
PRODUCTION: 4,000 bottles
