APPELLATION: Valpolicella
VARIETALS: Corvina, Corvinone, Rondinella, Oseleta
VINEYARD: Sourced from vineyards in the zones of Mezzane and Tregnano in Valpolicella planted in 2001.
ORIENTATION:Southeast at 450 meters in elevation.
SOIL: Glacial, chalky soil.
VITICULTURE: Hand-harvested in mid-October.
VINIFICATION: The grapes are slight dried (for about 20 days). The wine is then fermented in stainless steel where it then undergoes malolactic fermentation.
AGING: It then goes into 20 HL botti (french oak - allier) for 3 to six months.
FOOD PAIRING: It pairs very well with nibbles and salami. Ideal on fresh dishes such as red tuna or salmon or with a chili seasoned pasta “alla busara”.
