The grape come from the vines that were planted in 1984 on calcareous clay soils. Manual harvest in small boxes, and sorting in the vineyard. Grapes are chilled then pressed, and skin fermented in stainless steel with indigenous yeasts for one week. Bottled with no additions. No SO2 added.
