Two worlds, two winemakers, one vision. After traveling through many winemaking regions of the world, César Baeza and Miguel Besoaín met in Chile to realize they shared a common vision to craft wines from different vineyards in Chile and worldwide, using their combined skills and world experience.
Riesling grapes were hand-picked late in the harvest at 26° Brix at their peak of flavor, maturity and balance; then cold “macerated” during 4 hours in a closed press; then gently pressed without the skins and cold-fermented at 16°C for 15 days, stopping the fermentation to retain the desired residual sugar. After the first racking, it is pumped- over weekly for a month to get full flavor of the fine lees and a strong and typical varietal character with a velvet finish, in the style of the best German noble Riesling wines. Bottled with a natural cork finish.
Casablanca Valley, Chile – This region sits on a set of rolling hills on the seaward side of the coastal range, particularly cold because of the Humboldt Current and consequently produces bright, vibrant wines. The soil here at 180 mts. above sea level is largely clay and loam over a granite base with moderate drainage.
