Cantina San Biagio Vecchio is a small artisinal producer focused on farming indigenous grapes local to Emilia Romagna. Their winery takes an organic and natural approach to both viticulture and vinification.
100% Albana from a small hill facing Faenza and the Adriatic Sea. Vineyards sit upon soil riddled with yellow sand (Sabbia Gialla ) with Southeastern exposure. Grapes are hand harvested, the same vines are harvested 3 different times to allow all the grapes to reach their maximum expression. The wine spends two days of skin contact maceration and fermentation with indigenous yeast. No filtration, only use of thermic shock to drain the sediments. Aged in Stainless steel for 6 months and then 6 months in bottle.
