Dalle Ore is a family estate in the hills of the Veneto in Northern Italy. There father and daughter Marco and Bendetta grow grapes with the utmost care and without any harmful chemicals. Further, they make all of their wines naturally with very little sulfur.
The estate is certified organic and uses biodynamic practices in the vineyard. A fifth of the estate is maintained as forest and meadows to encourage biodiversity. To ensure the transference of the energy Marco guides from the vineyard into the glass, the winemaking at Dalle Ore is strictly without manipulation. Only sulfur is added when necessary and in minimal quantities.
Grown on volcanic soils with South facing aspect. Hand harvested. 30 days on skins. Fermentation with native yeasts in stainless steal. Unfined and unfiltered with only 2.5mg/l sulfur added at bottling. 11% alcohol.
Varietal: Garganega.
PAIRING: Enjoy with freshwater fish lightly grilled or shrimp tacos.
