Domaine La Rouviole, Minervois A Tempo 2021

n the game of chess, A Tempo means to play without thinking. This certified-organic Minevrois, made by an avid chess player, is instinctive grape growing and winemaking on display. Planted on clay-limestone slopes near the village of Siran in the hear of Minervois appellation, the grapes for this cuvee are from old vines and are two-thirds Syrah and one third Cinsault. The grapes are fermented in concrete separately for 15 days and blended and aged in fiber glass tanks (no oak aeging). Only 425 cases produced and 200 cases imported to the U.S.
