Sylvain Bailly, Sancerre Terroirs 2021

• Domaine Bailly has been handed down through generations of vignerons since 1700. The estate covers 12 hectares and is spread over 23 separate parcels, mostly in and around the village of Bué with holdings in famed vineyards such as Chêne Marchand.
• The soils are made up of 60% chalky soils and 40% clay-based soils. This composition enables Bailly to grow Pinot Noir (25% of plantings) in clay soils and to split the Sauvignon vineyards between both the chalk and the clay-based parcels. Vinifications are separated by parcels with similar exposures, soil types and vine ages.
• The lineup of Bailly Sancerre is revered for its consistency, balance and excellent value. These are textured, charming Sancerres in a popular appellation where quality can vary greatly.

VARIETALS Sauvignon Blanc

VINEYARD 20+ year old vines from the village of Bue, but also extending into Sancerre, Amigny, Crezancy and Montigny. Planted 6500-7000 vines per hectare.

SOIL Limestone/Kimmeridgian soils with hard pebbles formed during the Jurassic period.

VITICULTURE Hand harvested

VINIFICATION Fermented in stainless steel using indiginous yeast.

AGING Aged on the lees in stainless steel and bottled in the spring.
