Two worlds, two winemakers, one vision. After traveling through many winemaking regions of the world, César Baeza and Miguel Besoaín met in Chile to realize they shared a common vision to craft wines from different vineyards in Chile and worldwide, using their combined skills and world experience.
Maipo Valley, Chile – Rising into the Andean foothills is Alto Maipo, the most prestigious of Maipo’s viticultural areas. The vineyard grows along the banks of the Maipo River at 2,000 feet above sea level. Broad variation between daytime and nighttime temperatures gives us a bold, yet elegant Cabernet Sauvignon. The top soil is shallow sandy-silky with 75% rough stone underneath, allowing for good drainage.
Cabernet Sauvignon grapes were hand-picked late in the season, at 24.5° Brix, leaving time for the grapes to express their maximum potential; before pressing or fermenting, the grapes were left 5 days on the skins (cold maceration) to extract fresh fruit flavors and deep color. After fermenting for 10 days using proprietary yeast, the must is racked and sent to French Oak Barrels for 18 months; bottled with a natural cork finish.
