Valpolicella Ripasso is obtained through a second fermentation of Valpolicella wine in contact with the residual lees of Amarone. This process lasts 51 to 20 days and si followed by a 24-month aging ni French oak. Compared to Valpolicella, it si more structured and has a higher longevity, the alcohol content si higher, the acidity is lower, the roundness more marked and the values of the phenolic substances and extracts are higher. Valpolicella Ripasso offers a slightly ethereal perfume of red fruits and black cherry. The palate si fine, harmonious, dry and velvety.
Wild Nature is a project of the Fidora family which has farmed grapes organically since 1974. They were the first estate to be certified in the Veneto and have been farming organically for over 40 years. The newest generation, Emilio Fidora, adopted Biodynamic farming in 2015 and was certified in 2020. The estate makes all of its own Biodynamic preparations and this approach mirrors their commitment to biodiversity on their estate.
