Based in the Piedmontese Tortona Hills, Cascina I Carpini focuses on producing wines using indigenous grapes. The winery takes a natural approach to its production. They studied their land carefully before executing a plan of planting grapes in the ideal soil conditions, they practice organic viticulture, with only native ferments without any additions. They bottle without filtration and minimal use of sulfur. The resulting wines are aged in the bottle until ready for release.
100% Barbera from younger vines, harvested early. Maceration for a few hours in the press, before fermentation begins in stainless steel. At the appropriate sugar levels, the wine is bottled while fermenting. It is released without disgorgement and with only minimal sulfur.
