Malbec vines are 30+ years old and planted at a high elevation in alluvial soils with decomposed rhyolite. After a cold maceration of 5 days, grapes go into stainless steel vats, where indigenous yeasts initiate fermentation. After a 7-day fermentation, the wine sits on the skins for 20 additional days. It is then pressed to concrete tanks, where it rests for 6-8 months on lie. Lightly filtered.
