Sotol is a distilled spirits made from the Dasylirian plant a.k.a Dessert Spoon, a.k.a Sotol.
Plenty of energy and character, with candied citrus, crushed rocks, slate, and a slight touch of classic reduction that adds character.
Light bodied, fresh red fruits, touch of vanilla, a bit of earthiness, drink with a slight chilled.
Light on the palate, fresh with mineral-laced red fruit. Tannins are just a hint dry, tight with rose petals and blood orange. Spicy notes on the modest finish.
Aroma of red cherries, raspberries, and violets along with notes of toasty oak. On the palate, fresh berries with spice and a hint of soft caramel on the finish.
