Sweet taste, slightly sapid with great minerality, moderate acidity, and no bitterness.
Extremely complex, but not in a confusing way. It’s a little sweet, nicely bitter and surprisingly fruity. Similar to Angostura Bitters.

Sotol is a distilled spirits made from the Dasylirian plant a.k.a Dessert Spoon, a.k.a Sotol.
Juniper, citrus & cinnamon follow through on the mid-palate before giving way to a slow alcohol burn. Very mixable gin, try it in a gimlet.
We’ve fortified the shrub with alcohol (to better extract the flavors from the spices) and made it much more concentrated, so you only need to use drops instead of ounces to get the desired effect… which, in this case, is a good ol’ bit of heat.
Light fruit and caramel notes on the nose, with tangy citrus and peach flavors on the palate, complemented by notes of pepper and oak in the dry finish.
Peanuts and freshly cut celery on the nose lead to a palate of chestnuts, juniper, and lemon oil with a finish of peppermint, poppyseeds, and dried peaches
